Hey gang, Matt here with the first in our new series, “Recipe of the Month.”
In our year-end survey, we received some great feedback from many of you about featuring a Recipe of the Week. Well, now it’s here!
To help us kick it off, I’ve teamed up with, who else: my Mom! She runs the popular Country Home and Hearth Facebook page, where her more than 150,000 followers will find recipes like this one, and much more.
She’s also a heart attack survivor. At age 42, she survived what is known as the “widowmaker heart attack” and has since been diagnosed with heart failure. She had already lost weight and been eating healthy before that life-changing day in 2011, but she has maintained the healthy lifestyle with recipes like the one below.
In recognition of February as American Heart Month, she pulled out a heart-healthy recipe to help us all warm the bones after a chilly last month or so.

Recipe for Potato Broccoli Soup

Notes
Serves: 8
Ingredients
1 1/2 cups each Potatoes and broccoli
1/3 cup diced celery
1/3 cup chopped onion
3 1/4 cups water
2 Tbsp sodium free chicken bouillon
1/2 tsp black pepper
5 Tbsp butter or margarine
5 Tbsp flour
2 cups fat free milk
Cheddar cheese
Instructions
Combine the potatoes, celery, onion, and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes and broccoli are tender, about 15 minutes.
Stir in the bouillon, butter, and black pepper.
In a separate bowl mix milk and flour until there are no lumps. Stir the milk mixture into the soup.
Use an immersion blender to make a creamy soup.
Serve with cheddar cheese on top.
